This amazing recipe comes from my former coworker’s sister’s blog (which isn’t up anymore).

• 1 Tsp. Olive Oil
• 1 lb Italian sausage (spicy or sweet)
• 1 cup onion, chopped
• 3 cloves garlic, minced
• 1 zucchini, sliced
• I carrot, sliced
• 1 red bell pepper, diced
• ½ cup dry red wine (Cabernet)
• 5 cups beef broth
• 1 can diced tomatoes (15 oz)
• 8 oz tomato sauce
• 2 tsp. oregano, fresh (minced)
• ½ tsp. red chili flakes
• 2 handfuls raw baby spinach
• 1 lb cheese tortellini

Heat olive oil in large soup pot over medium-high heat and add sausage (casings removed). Sauté sausage, break it up, until mostly cooked. Remove sausage onto a plate and most of fat from the pot. Add onion and sauté for three minutes then add in zucchini, bell pepper and carrot. Sauté for an additional 5 minutes. Throw in a pinch of salt. Add garlic and sauté for one minute until fragrant. Add sausage back to the pot with broth, tomatoes, tomato sauce, red wine, oregano and chili flakes. Stir. Simmer for 35-40 minutes with lid on partially over medium-low heat. While simmering, add the tortellini and cook until finished, about 7-8 minutes. Add two handfuls of raw spinach and stir to wilt. Taste the soup and season to your liking with salt & pepper. Garnish with parmesan cheese and/or fresh basil.

I’ve made it twice since Halloween (today is Nov. 25). We really like it in my house!
